Southern Rice Pudding

Cups milk

½

 

Cup uncooked white rice

¼

 

Tsp salt

Egg yolks

3

 

Tbs sugar

¾

 

Cup heavy cream

1

 

Cup raisins or chopped dates (Optional)

 Assemble all ingredients and utensils.

 In top of double boiler, bring milk to a boil; stir in rice and salt.  Continue cooking over hot water until milk is absorbed, about 30 minutes.  Beat egg yolks with sugar and cream.  Combine with rice mixture.  Add raisins or dates.  Pour into a 2-quart casserole dish.

 Bake in a 350° oven until top is brown – about 15 minutes.

 Yield:  6 to 8 servings
